- 2 tbsp lime juice
- 1/4 cup chopped cilantro
- 1 tsp chili powder
- 1/2 cup mayonnaise
- 1/2 cup crumbled feta cheese
- 1/4 cup sliced jalapeños
Instructions
- Preheat the grill or stovetop grill pan over medium-high heat. Season chicken with salt, pepper, and chili powder.
- Grill chicken for about 6-7 minutes per side or until internal temperature reaches 165°F (75°C).
- While grilling, sauté corn in olive oil over medium heat for about 5-8 minutes until slightly charred.
- Mix mayonnaise, lime juice, and cilantro in a bowl until creamy.
- Slice grilled chicken and assemble bowls with corn, chicken, and drizzle with sauce.
- Top with feta cheese and jalapeños before serving.
