Ingredients

  • Bone-in chicken pieces (thighs or drumsticks)
  • Large yellow onion
  • Fresh garlic cloves
  • Fresh ginger
  • Extra virgin olive oil
  • Cinnamon stick
  • Cumin and coriander powder
  • Dried apricots, chopped
  • Chicken stock or water
  • Salt and pepper
  • Fresh cilantro or parsley for garnish

Instructions

  1. Chop the onion, mince the garlic, and grate the ginger.
  2. Heat olive oil in a large pot over medium-high heat. Brown the chicken pieces for 5-7 minutes.
  3. Stir in the onions, garlic, and ginger until onions are translucent (about 3-4 minutes).
  4. Add cumin, coriander, and cinnamon stick; mix well to coat.
  5. Pour in chicken stock to partially cover the meat and add chopped apricots.
  6. Reduce heat to low. Cover and simmer for 40-45 minutes until the chicken is tender. Garnish with cilantro or parsley before serving.
