Ingredients
- Bone-in chicken pieces (thighs or drumsticks)
- Large yellow onion
- Fresh garlic cloves
- Fresh ginger
- Extra virgin olive oil
- Cinnamon stick
- Cumin and coriander powder
- Dried apricots, chopped
- Chicken stock or water
- Salt and pepper
- Fresh cilantro or parsley for garnish
Instructions
- Chop the onion, mince the garlic, and grate the ginger.
- Heat olive oil in a large pot over medium-high heat. Brown the chicken pieces for 5-7 minutes.
- Stir in the onions, garlic, and ginger until onions are translucent (about 3-4 minutes).
- Add cumin, coriander, and cinnamon stick; mix well to coat.
- Pour in chicken stock to partially cover the meat and add chopped apricots.
- Reduce heat to low. Cover and simmer for 40-45 minutes until the chicken is tender. Garnish with cilantro or parsley before serving.
