- 3–4 boneless skinless chicken breasts
- 3 cloves fresh garlic, minced
- 1 cup full-fat Greek yogurt
- Juice of 1 lemon (freshly squeezed)
- ¼ cup extra virgin olive oil
- 2 teaspoons dried oregano
- Salt and pepper to taste
Instructions
- Trim excess fat from chicken breasts and rinse under cold water. Pat dry with paper towels.
- In a bowl, mix Greek yogurt, minced garlic, lemon juice, olive oil, oregano, salt, and pepper until smooth.
- Coat chicken breasts thoroughly with the marinade. Cover and refrigerate for at least one hour (or overnight for deeper flavor).
- Preheat grill or oven to medium-high heat. Cook chicken for about 6-8 minutes per side until golden brown and juices run clear (or roast at 400°F (200°C) until cooked through).
- Let rest for five minutes before slicing. Serve with fresh veggies or warm pita bread.
