- 1 cup green or brown lentils
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, chopped
- 2 teaspoons cumin
- Juice and zest of 1 lemon
- 4 cups vegetable broth
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Sauté diced onion until translucent.
- Add minced garlic, carrots, and celery. Cook for about 5-7 minutes until softened.
- Stir in rinsed lentils and cumin; cook for 1-2 minutes to combine flavors.
- Pour in vegetable broth until lentils are submerged. Bring to a gentle boil then reduce heat.
- Simmer for 30-35 minutes or until lentils are tender. Stir in lemon juice and zest.
- Season with salt and pepper before serving.
