- 1 can (15 oz) black beans, drained and rinsed
- 1 cup cooked quinoa, cooled
- 1/2 cup breadcrumbs (whole wheat preferred)
- 1/4 cup fresh cilantro, finely chopped
- 2 garlic cloves, minced
- 1 tsp cumin powder
- 1 large egg (or 2 tbsp flaxseed meal mixed with 6 tbsp water)
- Salt and pepper to taste
- 4 whole grain buns
- Toppings: lettuce, tomato, avocado
Instructions
- Prepare all ingredients by gathering them on your counter.
- In a large bowl, mash the black beans until mostly smooth but still chunky.
- Mix in quinoa, breadcrumbs, garlic, cilantro, cumin, salt, and pepper until well combined.
- If using an egg, beat it lightly before mixing it in; if vegan, stir in the soaked flaxseed meal until incorporated.
- Shape the mixture into four even patties about ½ inch thick.
- Preheat the grill or skillet over medium heat and cook patties for about 5 minutes on each side until golden brown.
