- 1/2 cup butter
- 4 cups powdered sugar
Instructions
- Preheat oven to 350°F (175°C) and grease two round cake pans.
- In a bowl, whisk together flour, baking powder, cinnamon, and salt.
- In another bowl, beat together sugars and eggs until fluffy; gradually stir in vegetable oil.
- Combine wet and dry mixtures until just blended; gently fold in grated carrots.
- Divide batter between prepared pans; bake for 25-30 minutes or until a toothpick comes out clean.
- Allow cakes to cool completely before frosting with cream cheese frosting.
