- 1/2 cup bell peppers (red or yellow), finely chopped
- 1/4 cup crumbled feta cheese
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- Olive oil spray (for greasing)
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a muffin tin with olive oil spray.
- In a large bowl, whisk the eggs until slightly frothy.
- Add the chopped spinach, bell peppers, feta cheese, onion powder, salt, and pepper to the eggs. Stir gently until combined.
- Pour the mixture evenly into each muffin cup until about three-quarters full.
- Bake for 20 minutes or until golden brown on top.
- Allow the bites to cool for five minutes in the tin before transferring them to a wire rack.
