- 6 large eggs
- 1 cup fresh spinach, chopped
- 1/2 cup red bell pepper, finely chopped
- 1/2 cup yellow bell pepper, finely chopped
- 1/3 cup crumbled feta cheese
- 1/2 tsp onion powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin with nonstick spray.
- In a large bowl, whisk together the eggs, onion powder, salt, and pepper until smooth.
- Gently fold in the spinach, bell peppers, and feta cheese until evenly combined.
- Pour the egg mixture into muffin cups, filling them about three-quarters full.
- Bake for 20-25 minutes until puffed and golden. A toothpick inserted should come out clean.
- Allow to cool slightly before removing from the tin.
