Ingredients
- 1 pound large shrimp (peeled and deveined)
- 1 tablespoon olive oil
- 1 lime (juiced)
- 1 ripe avocado (diced)
- 1 cup fresh corn (cut off the cob)
- 1/2 medium red onion (finely chopped)
- 1/4 cup fresh cilantro (chopped)
- 1/2 cup sour cream
- 2 tablespoons chipotle sauce
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Marinate shrimp in olive oil, lime juice, salt, and pepper for at least 30 minutes.
- In a bowl, combine diced avocado, corn, red onion, cilantro, and lime juice to make the corn salsa.
- Preheat the grill to medium-high heat. Skewer shrimp and grill for 2-3 minutes on each side until pink and opaque.
- Gently mix grilled shrimp into the corn salsa.
- In a separate bowl, blend sour cream with chipotle sauce and garlic powder until smooth.
- Serve the shrimp mixture in bowls topped with creamy sauce and garnish with extra cilantro or lime wedges.
