- 3–4 boneless, skinless chicken breasts
- 1 cup plain Greek yogurt
- 3 garlic cloves, minced
- 2 tsp cumin
- 1 tsp smoked paprika
- ½ cup tahini
- Juice of 1 lemon
- Fresh greens (spinach or lettuce)
- Sliced cucumbers, tomatoes, and onions
Instructions
- Marinate the chicken: In a large bowl, mix yogurt, garlic, cumin, paprika, salt, and pepper. Add chicken and coat well. Cover and refrigerate for at least one hour or overnight.
- Preheat the grill or skillet to medium-high heat.
- Grill the chicken for 6-7 minutes on each side until golden brown and cooked through.
- Prepare the sauce: Whisk together tahini and lemon juice in a small bowl; gradually add olive oil until combined.
- Assemble bowls: Layer fresh greens at the bottom of bowls, followed by sliced cucumbers, tomatoes, onions, and grilled chicken strips.
- Drizzle with tahini sauce and serve immediately.
