- 3–4 boneless, skinless chicken breasts
- 4 cloves fresh garlic, minced
- 4 cups fresh baby spinach
- 8 oz cream cheese
- 1 cup low-sodium chicken broth
- 2 tbsp olive oil
- Salt and pepper, to taste
- 1 tsp Italian seasoning
Instructions
- Pat dry the chicken breasts and season both sides with salt and pepper.
- In a large skillet, heat olive oil over medium-high heat. Sauté the chicken for 6-7 minutes on each side until golden brown. Remove and set aside.
- In the same skillet, sauté minced garlic until fragrant (about 1 minute).
- Lower the heat and add cream cheese and chicken broth. Stir until smooth.
- Add spinach and Italian seasoning; cook until spinach wilts (2-3 minutes).
- Return the chicken to the skillet, spoon sauce over it, and simmer for an additional 5 minutes.
