- 3 cups cooked shredded boneless, skinless chicken breasts
- 1 cup seedless red or green grapes, halved
- 1/2 cup mayonnaise (or Greek yogurt for a lighter option)
- 1/2 cup chopped celery
- 1/4 cup finely chopped green onions
- 2 tbsp fresh lemon juice
- Salt and pepper to taste
Instructions
- Boil chicken breasts in salted water for 15-20 minutes until cooked through. Shred while warm.
- Wash and halve the grapes. Chop celery and green onions finely.
- In a bowl, mix mayonnaise (or Greek yogurt) with lemon juice until smooth.
- In a large bowl, mix shredded chicken, grapes, celery, green onions, and dressing. Stir gently to combine.
- Before serving, taste your salad and adjust seasoning with salt and pepper as needed.
- Serve immediately or refrigerate for about an hour to enhance flavors.
