- 2 pounds boneless chicken thighs
- 3 bell peppers (red, green, yellow)
- 1 red onion
- ¼ cup olive oil
- ¼ cup fresh lemon juice

- 1 teaspoon cumin powder
- Salt and pepper to taste
Instructions
- In a bowl, whisk together olive oil, lemon juice, garlic powder, cumin powder, salt, and pepper to create the marinade.
- Cut chicken thighs into bite-sized pieces and coat them thoroughly with the marinade. Cover and refrigerate for at least one hour or overnight.
- Chop bell peppers into large chunks and slice the red onion into wedges.
- Thread the marinated chicken onto skewers alternately with bell pepper chunks and onion wedges.
- Preheat your grill to medium-high heat (400°F). Lightly oil the grates.
- Grill the kebabs for about 10-12 minutes, turning occasionally until the internal temperature of the chicken reaches 165°F.
