- 3–4 boneless skinless chicken breasts
- 2 bell peppers (red and green)
- 1 large yellow onion
- 3 garlic cloves
- 2 tablespoons olive oil
- 1 cup long-grain white or brown rice
- 2 tablespoons fajita seasoning
- Juice of 1 lime
- Fresh cilantro (optional)
Instructions
- Prepare your ingredients by chopping the chicken into bite-sized pieces and slicing the bell peppers and onion.
- In a large skillet, heat olive oil over medium heat. Add the chicken, sprinkle with fajita seasoning, and cook until golden brown for about 6-8 minutes.
- Stir in the sliced bell peppers and onions; sauté for another 5 minutes until tender.
- In a separate pot, cook rice according to package instructions. Fluff with a fork once done.
- Mix the cooked rice with the chicken and veggies. Squeeze fresh lime juice on top and stir gently to combine.
- Spoon into bowls and garnish with cilantro if desired.
