- 3–4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups low-sodium chicken broth
- 1 cup mixed vegetables (fresh or frozen)
- 1 can (10.5 oz) cream of chicken soup
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C) and prepare a baking dish with nonstick spray.
- Season chicken breasts with salt and pepper and place them in the baking dish.
- In a bowl, mix rice, mixed vegetables, chicken broth, cream of chicken soup, and garlic powder until well combined.
- Pour the mixture over the chicken evenly.
- Cover with aluminum foil and bake for 45 minutes.
- Remove foil during the last 10 minutes to brown the top. Let cool slightly before serving.
