- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 1 cup granulated sugar
- 4 (8-ounce) packages cream cheese, softened
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup sour cream
Instructions
- 1. Preheat your oven to 325°F (163°C). In a bowl, mix graham cracker crumbs, melted butter, and half a cup of sugar until combined. Press into the bottom of a springform pan.
- 2. In another bowl, beat softened cream cheese until smooth. Gradually add remaining sugar and vanilla extract; mix until blended. Add eggs one at a time, then stir in sour cream until well combined.
- 3. Pour the cream cheese mixture over the crust in the springform pan. Bake for about 60 minutes until edges are set but center remains slightly jiggly.
- 4. Turn off the oven and crack open the door to cool for an hour before refrigerating for at least four hours or overnight.
