Instructions
- Slice the ripe avocado in half, remove the pit, and scoop it into a bowl.
- Toast your bread slices until golden brown for added crunch.
- Mash the avocado with salt, pepper, and lemon juice until smooth yet chunky.
- In a nonstick pan over medium heat, cook the eggs to your preference (sunny side up is recommended).
- Spread the mashed avocado generously on each slice of toast and top with an egg.
- Season again if desired and sprinkle optional toppings for extra flavor.
