  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 1 pound fresh strawberries, hulled and chopped
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 1 cup sour cream (full-fat)
  • 2 tsp vanilla extract
  • 3 large eggs, room temperature

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs and melted butter. Press into the bottom of a 9-inch springform pan.
  2. Bake crust for 8-10 minutes until lightly golden and set aside to cool.
  3. In another bowl, beat softened cream cheese until smooth. Gradually add sugar, mixing until fluffy.
  4. Mix in sour cream and vanilla extract. Add eggs one at a time, mixing gently after each.
  5. Fold in chopped strawberries carefully.
  6. Pour filling over cooled crust and bake at 325°F (160°C) for 50-60 minutes until edges are set but center is slightly jiggly.
  7. Cool completely and refrigerate for at least four hours before serving.
