- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 1 pound fresh strawberries, hulled and chopped
- 16 oz cream cheese, softened
- ¾ cup granulated sugar
- 1 cup sour cream (full-fat)
- 2 tsp vanilla extract
- 3 large eggs, room temperature
Instructions
- Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs and melted butter. Press into the bottom of a 9-inch springform pan.
- Bake crust for 8-10 minutes until lightly golden and set aside to cool.
- In another bowl, beat softened cream cheese until smooth. Gradually add sugar, mixing until fluffy.
- Mix in sour cream and vanilla extract. Add eggs one at a time, mixing gently after each.
- Fold in chopped strawberries carefully.
- Pour filling over cooled crust and bake at 325°F (160°C) for 50-60 minutes until edges are set but center is slightly jiggly.
- Cool completely and refrigerate for at least four hours before serving.
