- 8 oz dark chocolate (at least 70% cacao)
- 1 cup heavy cream
- 1/4 cup granulated sugar
- 3 large eggs (separated)
- 1 tsp vanilla extract
Instructions
- Melt the dark chocolate in a heatproof bowl over simmering water or in the microwave until smooth.
- In a separate bowl, whip half of the heavy cream until soft peaks form.
- Separate the egg whites from yolks. Whisk yolks with sugar until pale and creamy; fold in melted chocolate.
- Gently fold half of the whipped cream into the chocolate mixture, followed by beaten egg whites until no streaks remain.
- Spoon or pipe the mousse into serving cups and chill for at least two hours before serving.
