Instructions
- Grate the zucchinis and squeeze out excess moisture using a clean towel.
- In a mixing bowl, combine the grated zucchini with flour, eggs, garlic powder, chopped herbs, salt, and pepper until well mixed.
- Heat olive oil in a nonstick skillet over medium heat until shimmering.
- Scoop small amounts of batter into the pan, flattening slightly. Cook each side for about 3-4 minutes until golden brown.
- For the yogurt dip, mix Greek yogurt with lemon juice, salt, and pepper in a small bowl until smooth.
- Serve warm fritters alongside the yogurt dip.
