- 2 lbs bone-in chicken pieces (thighs, drumsticks, or breasts)
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1/4 cup cornstarch
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- Vegetable oil for frying (about 4 cups)
- hot sauce to taste (optional)
Instructions
- 1. Preheat oil in a deep pot to 350°F (175°C).
- 2. Marinate chicken in buttermilk mixed with garlic powder and hot sauce for at least one hour or overnight.
- 3. In a separate bowl, combine flour, cornstarch, salt, pepper, and paprika.
- 4. Dredge marinated chicken pieces in the flour mixture until fully coated.
- 5. Fry chicken in batches for 12-15 minutes until golden brown and cooked through (internal temp should reach 165°F/74°C).
- 6. Drain on a wire rack or paper towels and let rest for 5 minutes before serving.
