- 1.5 pounds small Yukon Gold potatoes

Instructions
- Preheat your oven to 450°F (230°C).
- Boil the Yukon Gold potatoes in salted water for 15-20 minutes until fork-tender.
- Drain the potatoes and let them cool briefly.
- On a parchment-lined baking sheet, smash each potato to about half an inch thick.
- Drizzle olive oil over the smashed potatoes and season with salt, pepper, and fresh herbs.
- Bake for 25-30 minutes until golden brown and crispy.
