- 8 rice paper wrappers
- 1 cup bell peppers, julienned
- 1 cup carrots, julienned
- 1 cup cucumbers, julienned
- ½ cup fresh mint leaves
- ½ cup fresh cilantro leaves
- ¼ cup peanut sauce (or hoisin sauce)
- 1 cup cooked shrimp or tofu (optional)
Instructions
- Prep all vegetables by washing and julienning them into thin strips.
- Soak each rice paper wrapper in warm water for about 10-15 seconds until pliable.
- Lay the soaked wrapper flat on a clean surface. Place a small amount of vegetables, herbs, and protein (if using) in the center.
- Fold in the sides and roll tightly from the bottom up to seal the roll.
- Place finished rolls on a platter and cover with a damp cloth until serving.
- Serve with peanut or hoisin dipping sauce.
