Instructions

- Wash and scrub the potatoes thoroughly, then cut them into uniform wedges.
- In a large bowl, toss the potato wedges with olive oil, salt, pepper, and any optional herbs until evenly coated.
- Arrange the wedges in a single layer on the prepared baking sheet.
- Roast for 25-30 minutes, tossing halfway through for even browning.
- Check for doneness; they should be golden brown and fork-tender before serving.
