- 1 lb lean ground beef
- 1 cup shredded cheddar cheese
- 12 eggroll wrappers
- 2 green onions, finely chopped
- 2 tbsp ketchup
- 1 tbsp yellow mustard
- Vegetable oil (for frying)
Instructions
- In a skillet over medium heat, brown the ground beef for 6-8 minutes until fully cooked. Drain excess grease and return to the pan.
- Stir in ketchup, mustard, and chopped green onions; cook for an additional 2-3 minutes.
- Remove from heat and mix in shredded cheddar cheese until melted.
- Lay an eggroll wrapper diagonally on a clean surface. Place about 2 tbsp of the filling near one corner. Fold the bottom corner over the filling and roll tightly while tucking in the sides.
- Heat vegetable oil in a deep frying pan over medium-high heat. Fry eggrolls for about 3-4 minutes on each side until golden brown, then drain on paper towels.
- Serve warm with extra ketchup or mustard for dipping.
