- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup panko breadcrumbs
- 2 large eggs
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt & pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Lightly spray a baking dish with nonstick cooking spray.
- Cut chicken breasts into one-inch strips and season generously with salt and pepper.
- In one bowl, whisk the eggs until frothy. In another bowl, mix panko breadcrumbs with garlic powder and smoked paprika.
- Dip each chicken strip in the egg mixture, allowing excess to drip off, then coat in the breadcrumb mixture.
- Arrange the coated strips on the prepared baking dish in a single layer and bake for 20-25 minutes or until golden brown and cooked through.
- Serve hot with your choice of dipping sauce or add them to a salad for extra crunch.
