Ingredients
- Boneless skinless chicken breasts
- Olive oil
- Fresh garlic
- Sun-dried tomatoes
- Fresh spinach
- Heavy cream
- Parmesan cheese
Instructions
- Season chicken breasts with salt and pepper. In a skillet over medium-high heat, heat olive oil and sear the chicken for 5-6 minutes on each side until golden brown. Remove from skillet.
- In the same skillet, sauté minced garlic and chopped sun-dried tomatoes for 1 minute. Pour in heavy cream and stir in grated Parmesan until melted.
- Add fresh spinach and stir until wilted (about 2 minutes). Return chicken to the skillet, spoon sauce over it, and heat for an additional 2 minutes.
- Serve immediately with sauce drizzled on top.
