- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup fresh spinach
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper.
- Cook the chicken for 5-7 minutes on each side until golden brown and cooked through; remove from the skillet.
- In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
- Add cherry tomatoes and cook until softened (3-4 minutes).
- Stir in fresh spinach until wilted.
- Pour in heavy cream and bring to a gentle simmer; add Parmesan cheese and stir until melted.
- Return chicken to the skillet, coating it with the sauce; simmer for an additional 2-3 minutes before serving.
