Ingredients
- 2 lbs red potatoes, peeled and diced
- 1/2 cup mayonnaise
- 2 tbsp Dijon mustard
- 1 cup chopped celery
- 1/2 cup finely diced red onion
- 3 hard-boiled eggs, chopped
- Salt and pepper to taste
Instructions
- Boil the diced potatoes in salted water for 10-15 minutes until fork-tender. Drain and let cool.
- In a separate bowl, mix mayonnaise, Dijon mustard, salt, and pepper.
- Combine cooled potatoes, celery, red onion, and hard-boiled eggs in a large bowl. Gently fold in the dressing until evenly coated.
- Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.
