- 4 boneless, skinless chicken breasts (1.5 lbs)
- 4 cloves fresh garlic, minced
- 1 medium onion, chopped
- 2 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 cup long-grain white rice
- ¼ cup low-sodium soy sauce
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
- Season the chicken breasts with salt and pepper.
- In a skillet over medium heat, sauté onions and garlic until fragrant (about 5 minutes).
- Brown the seasoned chicken breasts on both sides in the skillet (about 3 minutes per side).
- Add chicken broth, heavy cream, soy sauce, and thyme; stir and simmer for 5 minutes.
- Stir in uncooked rice, transfer to the baking dish, cover with foil, and bake for 35-40 minutes until rice is tender.
- Allow it to rest for 5 minutes before serving.
