- 1 cup Arborio rice
- 4 cups chicken or vegetable broth
- 1 medium shallot, finely chopped
- 1/2 cup freshly grated Parmesan cheese
- 1/2 cup dry white wine
- 2 tablespoons butter
- Fresh herbs (parsley or thyme), for garnish
Instructions
- Prepare your ingredients by chopping shallots and measuring broth.
- In a saucepan, heat the broth over medium heat until simmering.
- In another pot, melt butter and sauté shallots until translucent (about 3-4 minutes).
- Add Arborio rice and toast lightly for 1-2 minutes.
- Pour in white wine and stir until absorbed.
- Gradually add warm broth one ladleful at a time, stirring continuously until each addition is absorbed (about 18-20 minutes).
- Once creamy and al dente, remove from heat and stir in Parmesan cheese and butter.
- Serve hot, garnished with fresh herbs.
