Ingredients
Scale
- 1 cup short-grain rice (Arborio or sushi)
- 2 cups whole milk
- 1/2 cup granulated sugar
- 1 tsp pure vanilla extract
- 1 cinnamon stick
- Ground cinnamon (for garnish)
- Fresh fruit or nuts (optional)
Instructions
- Rinse the rice under cold water until clear to remove excess starch.
- In a large saucepan over medium heat, combine milk, sugar, vanilla extract, and the cinnamon stick. Stir until sugar dissolves.
- Add rinsed rice to the mixture. Bring to a gentle boil, then reduce heat to low and cover. Simmer for 20-25 minutes until rice is tender.
- Remove from heat, discard the cinnamon stick, and stir in an additional cup of milk for creaminess.
- Adjust sweetness with more sugar or vanilla if desired. Serve in bowls topped with ground cinnamon and fresh fruits or nuts.
