- 3 pounds Yukon Gold or red potatoes
- 1 cup full-fat mayonnaise
- 1 tablespoon Dijon mustard
- 1 cup chopped celery
- 1/2 cup thinly sliced green onions
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Boil potatoes until fork-tender (about 10-15 minutes). Drain and let cool slightly.
- In a bowl, whisk together mayonnaise, Dijon mustard, salt, pepper, and paprika until smooth.
- Chop celery and green onions.
- In a large bowl, gently fold warm potatoes with chopped veggies. Drizzle dressing over the top and mix carefully.
- Refrigerate for at least one hour before serving to allow flavors to meld.
- Serve chilled, garnished with extra paprika or herbs if desired.
