- 4 boneless, skinless chicken breasts
- 4 cloves fresh garlic, minced
- 8 oz cremini or button mushrooms, sliced
- 1 cup heavy cream
- 1 cup low-sodium chicken broth
- 2 tbsp butter
- 2 tbsp olive oil
- 1 tsp dried thyme (or fresh)
- Salt and pepper to taste
Instructions
- Pat dry the chicken breasts and season both sides with salt and pepper.
- In a large skillet over medium heat, melt butter and olive oil. Add the seasoned chicken and cook for 6-7 minutes per side until golden brown. Remove from the skillet.
- In the same skillet, add minced garlic and sliced mushrooms. Sauté for about 5 minutes until tender.
- Pour in chicken broth and heavy cream, scraping up browned bits from the pan. Stir in thyme and simmer for 3-5 minutes until slightly thickened.
- Return the chicken to the skillet, spoon sauce over it, and simmer for another 3-4 minutes.
- Serve hot with rice or pasta, drizzling extra sauce on top.
