  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 8 oz cremini or button mushrooms, sliced
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 1 tsp dried thyme (or fresh)
  • Salt and pepper to taste

Instructions

  1. Pat dry the chicken breasts and season both sides with salt and pepper.
  2. In a large skillet over medium heat, melt butter and olive oil. Add the seasoned chicken and cook for 6-7 minutes per side until golden brown. Remove from the skillet.
  3. In the same skillet, add minced garlic and sliced mushrooms. Sauté for about 5 minutes until tender.
  4. Pour in chicken broth and heavy cream, scraping up browned bits from the pan. Stir in thyme and simmer for 3-5 minutes until slightly thickened.
  5. Return the chicken to the skillet, spoon sauce over it, and simmer for another 3-4 minutes.
  6. Serve hot with rice or pasta, drizzling extra sauce on top.
