- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 4 cloves fresh garlic, minced
- 8 oz pasta (fettuccine recommended)
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 2 cups fresh spinach
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Gather all ingredients. Chop chicken into bite-sized pieces and mince garlic.
- Boil salted water in a large pot. Add pasta and cook until al dente; drain and set aside.
- Heat olive oil over medium heat in a large skillet. Add seasoned chicken and cook until golden brown (6-8 minutes), flipping halfway through.
- Stir in minced garlic until fragrant (about 1 minute). Pour in heavy cream while scraping the pan's bottom for added flavor.
- Mix in Parmesan until melted, then add spinach to wilt gently.
- Add cooked pasta to the skillet, tossing until evenly coated with sauce. Adjust seasoning if needed.
