- 1 lb boneless, skinless chicken breasts
- 16 oz fresh or frozen gnocchi
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 1 tsp garlic powder
- 2 cups fresh spinach
- ½ cup Italian-seasoned breadcrumbs
- 2 tbsp olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet over medium heat, add 1 tablespoon olive oil and sauté diced chicken for 6-8 minutes until golden brown.
- Add spinach to the skillet and cook until wilted (2 minutes).
- Pour in heavy cream, garlic powder, and half of the Parmesan cheese; stir until combined and bubbly (3-4 minutes).
- Fold in gnocchi and mix gently before transferring everything to a greased baking dish.
- Combine remaining Parmesan cheese with breadcrumbs and drizzle with 1 tablespoon olive oil; sprinkle over the top.
- Bake for 25-30 minutes until bubbling and golden brown.
