- 4 boneless, skinless chicken breasts (about 1 lb)
- 3 cloves fresh garlic, minced
- 8 oz cream cheese
- 2 cups low-sodium chicken broth
- 12 oz fresh or frozen tortellini
- 1/2 cup grated parmesan cheese
Instructions
- Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium heat and cook chicken until golden brown, about 6-8 minutes per side. Remove and set aside.
- Boil salted water in a large pot and cook tortellini according to package instructions until they float (3-5 minutes for fresh).
- In the same skillet, sauté minced garlic until fragrant (30 seconds).
- Add cream cheese and chicken broth to the skillet; stir until smooth, adjusting thickness with more broth if needed.
- Chop cooked chicken, add it back to the skillet along with drained tortellini and gently mix.
- Serve on plates, garnished with parmesan cheese and remaining sauce.
