- 3 boneless, skinless chicken breasts (about 1.5 lbs)
- 6 oz spicy or mild chorizo sausage
- 12 oz penne pasta
- 1 cup heavy cream
- 4 cloves garlic, minced
- 1 cup grated Parmesan cheese
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions
- Chop chicken into bite-sized pieces and slice chorizo into rounds.
- Heat olive oil in a large skillet over medium heat. Add chicken, cooking until golden brown (6-8 minutes). Stir in chorizo; sauté until crispy.
- Add minced garlic and cook until fragrant (about 30 seconds). Meanwhile, cook pasta according to package instructions until al dente.
- Reduce heat and stir in heavy cream; simmer until slightly thickened (3-5 minutes), scraping up bits from the pan.
- Drain pasta and add to the skillet, tossing until well-coated in sauce.
- Serve hot, garnished with Parmesan cheese and parsley.
