- 3 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 ripe avocados
- 1 cup shredded mozzarella cheese
- 4 slices whole wheat bread
- 2 tbsp mayonnaise
- Salt & pepper to taste
- Lettuce or spinach (optional)
Instructions
- Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat and cook the chicken for 6-7 minutes on each side until golden brown and cooked through.
- While the chicken cooks, mash the avocados in a bowl and season lightly with salt.
- Toast the whole wheat bread until golden brown.
- Spread mayonnaise on one slice of toasted bread, layer with mashed avocado, top with slices of chicken, and sprinkle with shredded mozzarella cheese.
- Grill the sandwich in the skillet until both sides are golden brown and the cheese is melted, about 3-4 minutes per side.
