- 3 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 cups fresh broccoli florets
- 8 oz pasta (fettuccine or penne)
- 2 cups refrigerated or homemade Alfredo sauce
- 1 cup shredded mozzarella cheese
- 1 cup shredded Parmesan cheese
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C) and grease a baking dish with nonstick spray.
- Cook pasta in salted boiling water until al dente; drain and set aside.
- In a skillet, heat olive oil over medium heat. Season diced chicken with salt and pepper; sauté until golden brown (7-10 minutes).
- Add broccoli during the last few minutes of cooking until bright green but slightly tender.
- In a large bowl, combine cooked pasta, chicken, broccoli, Alfredo sauce, half of the cheese blend, garlic powder, salt, and pepper. Mix well.
- Transfer mixture to the greased baking dish; top with remaining cheese. Bake for 25-30 minutes until bubbly and golden brown.
