- 4 cups fresh broccoli florets
- 1 cup sharp cheddar cheese, grated
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 4 cups low-sodium vegetable or chicken broth
- 1 cup heavy cream
- 2 tablespoons unsalted butter
Instructions
- In a large pot over medium heat, melt the butter. Add onions and sauté until translucent, about 5 minutes. Stir in garlic for another minute.
- Add broccoli florets and broth; bring to a gentle boil. Reduce heat and simmer until broccoli is tender, about 10 minutes.
- Remove from heat and blend until smooth using an immersion blender; leave some chunks for texture if desired.
- Return to low heat; add heavy cream and cheddar cheese. Stir continuously until melted and creamy.
- Season with salt and pepper to taste before serving.
