- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup whole milk
- 2 large eggs (room temperature)
- 1 cup cooked sausage meat (crumbled)
- 1 cup shredded sharp cheddar cheese
- 1/4 cup chopped green onions
- Cooking spray or oil for greasing
Instructions
- Preheat your oven to 375°F (190°C). Grease a muffin tin with cooking spray or oil.
- In a large bowl, whisk together the flour, baking powder, salt, and black pepper until well combined.
- In another bowl, whisk the milk and eggs until frothy; add melted butter if desired.
- Cook the sausage over medium heat until browned and crumbly; allow to cool slightly.
- Fold the dry ingredients into the wet ingredients until just combined. Gently mix in the cooked sausage, cheddar cheese, and green onions.
- Scoop the batter into the prepared muffin tins, filling them about 3/4 full. Bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
- Cool for 5 minutes in the pan before transferring to wire racks.
