- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 cans (15 oz each) white beans, drained and rinsed
- 1 medium onion, diced
- 4 cloves garlic, minced
- 1 can (4 oz) green chilies, diced
- 4 cups chicken broth
- 8 oz cream cheese
- 2 tsp cumin
- 1 tbsp chili powder
Instructions
- Dice the onion and mince the garlic.
- Place chicken breasts at the bottom of the slow cooker. Layer with white beans.
- Add diced onion, minced garlic, green chilies, cumin, and chili powder.
- Pour in chicken broth until all ingredients are submerged.
- Cover and cook on low for 6-8 hours.
- Shred the chicken directly in the pot using two forks. Stir in cream cheese until melted.
