- 4 cups low-sodium vegetable broth

- 2 cups fresh spinach
- 3 cloves garlic (minced)
- ½ cup grated Parmesan cheese

- 1 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Sauté minced garlic until fragrant (about 1 minute).
- Pour in vegetable broth and add Italian seasoning; simmer gently for about 5 minutes.
- Reduce heat, gradually stir in heavy cream until smooth.
- Add cheese tortellini; cook according to package directions (3-5 minutes) until tender.
- Fold in fresh spinach until just wilted (about 2 minutes).
- Serve hot, topped with freshly grated Parmesan cheese.
