- 1 lb lean ground beef
- 1 medium onion, chopped
- 3 cloves fresh garlic, minced
- 28 oz canned diced tomatoes with herbs
- 4 cups low-sodium beef broth
- 2 cups small pasta (shells or ditalini)
- 2 tsp Italian seasoning
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- Fresh basil or parsley for garnish
Instructions
- In a large pot over medium heat, add a splash of olive oil and sauté chopped onions until translucent. Add minced garlic and cook until fragrant.
- Push onions and garlic aside; add ground beef and brown it, breaking it up with a spoon. Mix everything together once cooked.
- Stir in canned tomatoes and beef broth; bring to a gentle simmer.
- Add pasta and Italian seasoning; cook according to package instructions until al dente (about 8-10 minutes).
- Remove from heat and stir in ricotta cheese until melted; top with mozzarella and cover briefly to allow melting.
- Garnish with fresh herbs before serving.
