- 1.5 lbs beef chuck roast (cut into bite-sized pieces)
- 8 oz egg noodles
- 4 cups beef broth (low-sodium preferred)
- 2 medium carrots (sliced thinly)
- 1 medium yellow onion (diced)
- 3 cloves garlic (minced)
- 2 tbsp low-sodium soy sauce
- Salt & pepper to taste
- 2 tbsp olive oil (for searing)
Instructions
- Heat olive oil in a large pot over medium-high heat. Sear beef for 3-4 minutes on each side until browned.
- Add diced onion and minced garlic; sauté until translucent (about 2-3 minutes).
- Stir in sliced carrots, beef broth, and soy sauce. Bring to a gentle simmer.
- Reduce heat and simmer uncovered for about 1 hour until beef is tender.
- Add egg noodles and cook according to package instructions until al dente (approximately 7-10 minutes).
- Taste and adjust seasoning with salt and pepper before serving.
