- 2 lbs fresh ripe tomatoes, chopped
- 1 medium sweet onion, diced
- 3 cloves garlic, minced
- 4 cups low-sodium vegetable broth
- 2 tbsp extra virgin olive oil
- 1 cup fresh basil leaves, chopped
- 1 tsp sugar
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic; sauté until translucent (about 5 minutes).
- Stir in chopped tomatoes and sugar; cook until softened (about 8 minutes).
- Pour in vegetable broth; bring to a gentle simmer for 15 minutes.
- Add chopped basil just before blending for enhanced flavor.
- Blend the soup until smooth using an immersion blender or regular blender in batches.
- Adjust seasoning with salt and pepper as desired. Serve hot with a drizzle of olive oil.
