- 4 large yellow onions, sliced (about 1.5 lbs)

- 6 cups low-sodium vegetable broth

- 1 baguette or crusty bread, sliced for serving
Instructions
- In a large pot over medium heat, melt butter until frothy. Add sliced onions and sauté for 15-20 minutes until golden brown.
- Pour in vegetable broth and add thyme leaves. Season with salt and pepper. Bring to a gentle simmer.
- Let the soup simmer on low heat for about 30 minutes to deepen flavors.
- While the soup simmers, toast baguette slices until golden brown.
- Serve the soup hot with toasted bread on the side. Optionally, top with extra thyme or cheese.
