- 1 lb lean ground beef
- 1 (15 oz) can black beans, drained and rinsed
- 1 cup frozen corn
- 2 bell peppers, diced (mixed colors)
- 1 medium onion, finely chopped
- 1 (14.5 oz) can diced tomatoes with green chilies
- 2 cups low-sodium chicken broth
- 1 cup shredded cheddar cheese
- 2 tbsp taco seasoning
Instructions
- Grease your slow cooker with nonstick spray.
- In a skillet over medium heat, brown the ground beef with chopped onions for about 5-7 minutes until soft.
- Add bell peppers, frozen corn, black beans, and taco seasoning; stir for an additional 2-3 minutes.
- Pour the mixture into the slow cooker along with diced tomatoes and chicken broth; mix well.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until fragrant.
- About 15 minutes before serving, sprinkle cheddar cheese on top and close the lid until melted.
