  • 1 cup frozen corn
  • 2 bell peppers, diced (mixed colors)
  • 1 medium onion, finely chopped
  • 1 (14.5 oz) can diced tomatoes with green chilies
  • 2 cups low-sodium chicken broth
  • 1 cup shredded cheddar cheese
  • 2 tbsp taco seasoning

Instructions

  2. In a skillet over medium heat, brown the ground beef with chopped onions for about 5-7 minutes until soft.
  3. Add bell peppers, frozen corn, black beans, and taco seasoning; stir for an additional 2-3 minutes.

  5. Cover and cook on low for 6-8 hours or high for 3-4 hours until fragrant.
  6. About 15 minutes before serving, sprinkle cheddar cheese on top and close the lid until melted.
