- 1 lb lean ground beef
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup bell peppers, diced (mixed colors)
- 1 can (14.5 oz) diced tomatoes (low-sodium)
- 2 cups cooked pasta or rice
- 1 cup shredded cheddar cheese
- 2 tsp Italian seasoning
- 1 cup beef or vegetable broth
- 2 tbsp olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat. Sauté chopped onions and minced garlic until golden brown (about 5 minutes).
- Add the ground beef and cook until browned (7-10 minutes). Drain excess fat.
- Stir in bell peppers, canned tomatoes, and Italian seasoning; simmer for about 5 minutes.
- Mix in cooked pasta or rice until well combined.
- Fold in half of the shredded cheese, then transfer to a greased baking dish.
- Bake uncovered for 25-30 minutes until bubbly; top with remaining cheese during the last 5 minutes.
